Granny's gone and done it again

LOL I don't mess with trying to do bacon. BUT will be doing the hocks again . Infact I have appropriated all the hocks as my "surcharge" for providing the equipment and butchering center. :D
those hocks were delicious better then your big fat sausage.
 
I am getting a 1/2 and then the other half was my Christmas gift to Robert and Rod. Then Gene and his son?? are going to take the other 2 I think they are planning on doing all sausage. Sigh so 150 to 200 pounds of sausage. Not sure how many helpers or how many of they will actually do anything or stick around for the whole time/session.
They should stick around for the whole time. Sausage is alot of work.

I usually get stuck running the sausage into the casing end no one else can seem to get it right. As in packing the casing so no air pickets and you don't blow out the casing.
