Similar. Thai food (from Thailand, not China) uses more coconut milk, basil, and peanuts, and curry spices. Still Asian.

Depends on the age of the coconut. Coconut water has no fat in it. Coconut milk or coconut cream is full of delicious fat (coco butter?) and is great in cooking.
