Granny's gone and done it again

yes, thank you. A little sore . Im not sure what happened. I was in the torture chamber and just got overwhelmed. LOL Robert said I passed out and he put me in a chair there. I had a headache for a while. Its gone. I didnt fall on the floor but keeled over on the counter ? Hahaa Not sure how that happened He said it was fast. His worker sitting right there and didnt even notice.
 
Made gumbo for supper. Leg quarters were 69¢/lb so I boiled them for stock and meat. I gave Josie a bit of the cooked chicken skin and now she’s my shadow, just following me around and sitting right beside me. Maybe that’s why she was a murderer, it was a chicken skin deficiency. :hu

I think I dont know what gumbo is

I thought gumbo was corn, okra and tomatoes as a base. then whatever meat.

Start with a roux: browning flour and oil in cast iron over a low heat. Without a roux, it’s not gumbo. Next is the holy trinity: bell peppers, onion, and celery.

Then there are two types: chicken and sausage, or seafood.

Should not be corn. Tomatoes are hotly debated and mostly added by people who didn’t grow up on it. Okra used to be in it, but most in my generation don’t use it bc it’s slimy and better breaded and fried.

Okra and tomatoes can be eaten with cornbread.
 
Didnt I see rice ?

Yes. That’s under the gumbo, not in it. Rice first, then gumbo. This is how my family eats chili and mom soup also: big scoop of rice first, then the soup. I’m sure it’s to stretch it all farther because rice is so cheap. Folks around here also put a big scoop of potato salad in their gumbo, but I don’t like that.
