Thats how I seen my mom make it. I have tried many times and I just make dumplings. I never made rue, I added flour to itA quick gravy can also be done this way with a roast. Put the pan on a burner and add water to the drippings, scrape all the good stuff from the bottom and add your rue.
Still, if you have the time, I would rather simmer bones and veggies for a day or two and make gravy with that.
