Could you put the offal etc in your burn pit and save that fee?

honestly I would probably feed it to the chickens and what they don't eat can then go to the burn pit. AND I will ask him IF he/we can do that. Just not sure what I would be entitled to if the Co man buys the animals alive,
 
Dont you have to be lic. to sell usda ? I think you can sell the animal alive but not wrapped.

these would be paid for upon delivery to a butcher. The rest of the headachs are all theirs
 
If he was butchering for himself he could do it all. Its the customer wanting meat.

probably BUT I don't have a HUGE cooler to hang the meat to age it.

And to be honest I might start with Beary this fall, that way if its messed up not a huge loss. Him I think I can cut into small enough chunks to stick in the all fridge in the basement.
