Here we go.
1 cup sugar
3 TABLEspoons corn strach
1/2 TEAspoon cinnamon or a little more.
1/4 teaspoon nutmeg
1 cup sour cream either the homemade or that fancy stuff aka "cultured"
1 egg
3 cups chopped rhubarb EITHER fresh or frozen
1 UNbaked 9 inch pie shell
combine sugar, cornstarch, spices then beat in egg and sour cream. Gently fold in cut/chopped rhubarb and pour into pie shell.
Topping (I suggest making this before the filling above)
1/2 cup oats either quick or regular
1/3 cup packed brown sugar ( I used light)
1/2 TEAspoon grated zest either orange or lemon
1/3 cup cold butter
combine oats , flour , brown sugar , and zest, CUT in cold butter until crumbly. This gets sprinkled over the filling
Bake at 400* for 15 minutes then REDUCE heat to 350* for another 35 to 40 minutes OR until light brown (I missed this part on my first pie) Cool until stiff or set.
