Brining is a technique in which chicken or other meat is soaked in a brining solution for a period of time before it is cooked. Over the years, I’ve tried different formulations of brine. However, I keep coming back to this basic recipe which includes only three ingredients: Kosher salt, granulated sugar, and water.

Of course I leave out the sugar but add other spices. Like rosemary
 
Do you know if the highway still goes through a giant redwood tree on the coast?
There are roads that go through some giant redwood trees but no. The highways don’t anymore. Too big/too much traffic. The 101 goes through the redwoods and is a beautiful drive but we did the 5 - which still is pretty in its own right - especially around Shasta and such but…
 
Truly raw cashews are not safe to eat, as they contain a substance known as urushiol, found in poison ivy. Urushiol is toxic, and contact with it can trigger a skin reaction in some people. Cashew kernels are often sold as “raw” in stores, but these have been steamed.
So then, I especially like raw pecans and steamed cashews.
