Granny's gone and done it again

@LTAY, here is your recipe for pizza crust. It is based on one from the King Arthur web site. I do this in my KA stand mixer.

●1 c unfed SD discard (I will have fed it the night before)
●141 to 170 g water (start w lesser amount, add more if needed) [it is so humid here I use 120 g, or about 1/2 to 3/4 c)
●2-1/2 c (300 g) AP flour (I use half AP and half ww)
●1 tsp salt (I use kosher)
●1/2 tsp instant commercial yeast, instant
Opt.: 4 tsp KA pizza dough flavoring. Avail on line. This is finely ground Ital. seasoning plus a little nutritional yeast and other flavorings and is DELICIOUS. Gives the crust life.

■Combine all, knead about 7 minutes, dough should clean sides of bowl.
■Place in lightly greased bowl, cover, let rise till nearly doubled, 2-4 hrs.
■Divide, shape into two balls, cover and let rise another 1/2 hr.
■Shape into two discs. If dough won't stretch but snaps back, cover and let rest another 5 minutes.

*Bake 5 minutes, remove from oven, add cheese, remove from oven, add sauce and other toppings, bake 5 more minutes.

*I don't do this. Sauce over cheese just ain't right! That's the KA instructions. It's supposed to keep the crust from getting soggy from the sauce. Instead, I brush the tops with oil. Then add sauce, cheese, toppings, bake 10-12 minutes.

■Also, I often bake the bare crusts 5 -7 minutes, let cool, wrap in plastic bags and freeze for next pizza day. Then top and bake another 8 minutes or so.

Thank you so much. After reading this I light bulb went off in my head. I think the bread machine will do some of the work as in the kneading.... If so that is a major plus in having one.
 
We’re they a flipper
Can’t say too much as that’s what we’re planning on doing…walking into a hot mess property with the preverbal suitcase o cash…though our intent isn’t to flip. It’s just to get a house we can fix up for us.
Well. My baby chicks finally made it to the PO this morning. Three days late. There were no survivors, poor things. Hoover's will send me out a replacement shipment next Monday, they said.

Fawn went through 2 beds. She gets a towel now.
Goose went through beds. Kira…she left this one alone for the longest time, but quickly had tore bits out of her bolster bed. I just don’t spend much on their beds and away we go. I think part of this was just Bamboozlement since her routine was all disrupted. And it’s going to happen again today…
Has anyone tried pine shavings in nest boxes ?? If so how did that work out. TIRED of filthy eggs.
Bout the same as anything else really.
 
All the chores are done. It was still all in slow motion even with both of us working to coops today. Bad ribs or not they got to eat and I moved very carefully 5 - 50lb bags by sliding them off the stack onto the hood of the John Deere and then into the trash can bins. 2 days ago that was not possible. I'll have to be very careful now I know but at least I don't have as many worries about the kids getting fed as I had a few days ago. On another front the first chick of a new setting hatched early. I came in to a constant Cheep Cheep Cheep.... This one came out clean on his own and has a healthy set of lungs.
