I need a recipe for fresh figsAmish F.R.O.G. Jam
(Figs, Raspberries, Orange, Ginger)
Makes 5 to 6 8oz jars
5 cups dried figs (2 lbs), remove stems and quarter
2 cups orange juice
1 10oz bag frozen raspberries
1 Tbsp freshly grated ginger
1 cup sugar (more or less to taste)
Directions:
1. In a large SS pot add figs and orange juice. Bring to a boil, then reduce heat to a simmer and cover. Cook until skins are soft and the seeds have been released (15 minutes) stir every few minutes.
2. Using a stick blender, puree the fig skins (or allow mixture to cool and then put in a blender and puree).
3. Add raspberries and ginger. Increase heat to medium and stir frequently. Cook until the raspberries have fallen apart and are well incorporated.
4. Add sugar to taste. Since there is no pectin in this recipe the amount of sugar doesn’t matter.
Oh..figs. I remember how much my mother loved figs. Our figs are very late this year usuallybymemorial day they are ripe
YupGood!!!
My Bella us like this! She's a hug and love hog.
Bet they were dry in 5 minutes!Yep, sure did expect for hanging out wash.
You could dry them first in a dehydrator. Or adapt the recipe to fresh figs. I'd rather use them fresh in jam too. There are varieties of figs that will not bear without the wasp. I don't think we have that wasp here. Been so long since I did the research on that I don't know at them moment. Figs are a "I want" but not an "I need" right now. So many berries that need to be planted and Muscadines too. This fall when it cools down I need to build the trellis system for Muscadines. The vineyard needs to have some grade work done so it will not have standing water. I had to put on a flannel shirt this morning for chores outside. 68° here but they say 92° later today.I need a recipe for fresh figs
