Granny's gone and done it again

Good evening Granny Land. Ma is out closing the coops. I've not made it off the porch today. Frustrated by not getting anything done today. I did sit outside on the porch with a pet hen that ma brought in to see me. Then the wandering legbar girls came up to visit and got treats for so doing. Ma has me on some electrolytes. Not a lot that can be done for old bodies with decades of wear and tear.
 
Oh yeah. Save a chick and regular water both. Heat lamp. The shipping was just too much I think. :( count is currently at a loss of four. :( Murray Mcmurray gives a 48 hour guarantee so I’ll be calling them on Monday.
We started buying chicks from Murray McMurray in the late 50's. Even though they are no longer a family owned business they have always treated us very fairly with very few losses.
 
He wont admit he over did it yesterday in the heat. I made him rest today and hydrated with extra electrolyte water. If he doesn't straighten up, I'll make him rest tomorrow too!

OK, now I have to know what a smash burger is! How do you make it?

I had to Google. Basic, thin and crispy edges.

Yup! The key is you roll the burger into a ball instead of flat into a patty. And really high heat so it sears it and crisps/almost caramelizes the edges. And you put on the pan, grill, whatever, and then you press it down with the spatula or one of those press thingies. I held it down for 10 seconds then let go. Then left it on a bit longer then flipped it. Then I put cheese on mine but you don’t have to. Let it melt. Then took it off. DELICIOUS. I also sliced up a Vidalia onion earlier so I caramelized those as well first. I used Pam in the pan and then a little on top of them but you can use butter too. So I put the onions on top of my burger. And of course the sauce. There’s a lot of different variations of the sauce. This one was mayo, BBQ sauce, and chopped up dill pickles. Most are ketchup, mayo, mustard based. It was delicious though LOL
