Granny's gone and done it again

Good morning Granny Land. Got a few drops of rain... Not the deluge forecast. Just getting ready for the annual home visit from the UHC nurse for her evaluation or whatever it is that she does. Maybe it is just to see if we are real. Any hoot we are having a frozen pizza for lunch soon. We keep a few things for quick lunches and suppers on hand for days like today.
 
I am planning Mexican food for dinner tonight, Lijah mentioned he'd like enchiladas some day. We will see if today's the day or we end up eating cold sandwiches.

I started a batch of Spanish rice about 9:30, had to leave the kitchen "for a minute" and thought I had turned off the stove. You guessed it, I came back to a scorched mess of toasted rice burnt black. Had to pitch it and start over. Bleah. Taking a break now before I start on the enchilada sauce.

Beans in pressure cooker, smelling good.
Enchilada sauce, cooked and ready, based on mom's world-famous secret sauce. I think I cracked the code, it's delicious although I did get it a tad spicy for my taste, I know my family will love it. :love
Next: grate cheese, chop onion very fine, add oregano, fill and roll the enchiladas, put in pan, cover with sauce, bake till bubbly. Woot! :wee
