Granny's gone and done it again

I buy the whole boneless back quarter and slice it myself. I like it sliced no thicker than three quarter inch. I put tallow or butter in the skillet and bring it to boiling temperature. After adding the steak I turn it down to an aggressive simmer.
I add the lamb steak and set the timer for three minutes, timer goes off, I flip the steak and set the timer for two minutes. It usually fried to a medium rare which is ideal to me.
@Granny Hatchet If you fry it too much it becomes tough to chew.

I try to get lamb steak medium rare all the time and it’s delicious that way.
I wouldn't be able to afford that much meat and my hands wouldn't let me cut it.

Sadly my sister is suffering with one now. I'm worried about her. She's only 67 but she's had so much going on with her health. Her Osteoporosis is dangerously bad news. She had Uterine cancer, removed the uterus. Her Wright is down to 100 lbs. She's always been thin, but this is her lowest.
This is the sister some of you may remember me telling you about that list three children.
One girl at 19 months. One boy at 5 years. And another girl at age 7 years. All died of the same thing. Encephalitis. Dr's could never figure out why.
She has three boys. Two have named one of their girls after the 2 sisters that passed.
Strong woman.
 
And Im over here wondering how I will do my Christmas cards when my heart isn't in it.
I've been thinking on starting those. If you don't feel up to it Granny, we sure do understand. Remember last year I couldn't because I was packing..with covid.

Wow, that poor soul. IDK how anyone could cope w/ that. That's from mosquitoes isn't it?
