I had a couple of lbs. of almonds and decided to grind them in the food processor, now what do I do with them lol?
I'd really like to find a simple cake recipe using a cup or more of the ground almonds. Google has complicated recipes

which I've spent a good part of the morning exploring but really, is it possible to make a simple cake and maybe cookies with the almonds?

Almond Flour Fudge Cake

Cake:
2 cups almond flour
1 cup flour
2 cups sugar
1/2 cup cocoa - I like the Hershey's Special Dark
2 teaspoons baking powder
2 teaspoons baking soda
1/2-teaspoon salt
1 tablespoons vanilla
1/3-cup oil
4 eggs
1-cup sour cream

Frosting:
1/2-cup butter – 1 stick – room temp
1 large egg – room temp
2/3 cup sugar
8 ounces cream cheese – room temp
1 teaspoons vanilla

Preheat oven to 350° Spray a 9x13-inch cake pan with cooking spray.

In a large bowl combine dry ingredients and stir well.

Beat the eggs with the oil and the vanilla…add to the dry ingredients along with the sour cream and mix well. Pour into prepared pan and bake at 350° for 25 to 30 minutes or until toothpick inserted in the middle comes out mostly clean and cake is firm to the touch. Do not over cook…cake should still be moist. Remove from the oven to a wire rack and cool completely.

To Make Frosting:
Beat butter with electric mixer until light and fluffy. Add sweeteners and beat well scraping sides of bowl as needed.

Add the egg and beat until very fluffy…beat in vanilla.

Add softened cream cheese a little bit at a time beating until fluffy after each addition.
Frost cake...store in frig.

Blueberry Muffins

2-1/2 cups almond flour
1-cup all-purpose flour
3 teaspoons baking powder
1/4-teaspoon salt
1 cup sugar
1-tablespoon vanilla
2 eggs
1/4-cup oil
1/3-cup non-fat dry milk
1-cup water

Put all ingredients into mixer bowl and mix well.

Line 18 muffin cups with paper liners and divide batter evenly between them.

Drop 5 small to med size blueberries into the top of each muffin and poke them into the muffins with your finger.

Bake at 350° for 22 to 24 minutes

Your welcome...let me know how you like them. I love the texture and taste that you get with almond flour, I'm curious to know how you like it.

You can make any cake you like and then frost it with a frosting that contains butter, cream cheese and ground almonds.

If you ahve Pomegranate juice and chicken you can make Fesenjan. It is a meditteranean srew with ground almonds or walnuts. Served with rice, it is delicious!!!
