Hamburg egg size

All eggs are big enough to make a meal of! :) The only difference between small eggs - like the ones bantams lay - and standard hens is that there is a higher percentage of yolk in the smaller eggs. And, of course, you need more eggs. The standard egg is 2 ounces. A small bantam egg is just over an ounce. Hamburgs will be on the smaller size of the large eggs. When I do recipes that call for a lot of eggs, instead of counting the eggs, I weigh them. (I have more about cooking with backyard eggs in The Farmstead Egg Cookbook. http://hencam.com/books/
