Yes, lots of handling is great for chicks (and all animals!).
Rules for kids that I use are that they sit down and stay put. Chicks are resiliant, but I'm not a fan of them being dropped. I'm also afraid of kids getting excited, running around, jumping back, squealing, etc. I find that keeping the kids calm and quiet is best for all.
One thing I like to do is get the kids to sit in a circle with their legs out (or just feet touching if there are 2 kids), then the chicks get to run around in the middle and a whole bunch of the cuties can be out at once. Just be sure to put down a few towels
