Happy with my turkey project.

Nice turkey Litter-bit! How old was he?

Smoked my first turkey last night as a test for Thanksgiving. Pretty yummy.

1 gal water
1 gal Apple Juice
1.5 cups Kosher Salt
20 cloves garlic (minced)
2 tablespoons BLACK Pepper
1/3 cup Brown Sugar
1/4 cup Worcestershire Sauce

Brined it for 20 hours after splitting it down the back. Smoked in the water smoker for 5 hours. Nummy!
 
Dogfish, your brine recipe is just like mine! Course, I don't measure, but the ingredients are about the same. I think my bird was 6.5 months old. He wasn't tough at all, though! Really really delicious. I brined then roasted till the breast was 160 degrees, thigh 180. It cooked much faster than a store-bought turkey, as I read it would, 2.5 hours instead of the predicted 4.
Very moist meat, I was thrilled! Gonna try different methods with the next ones.
