I lower room temp eggs SLOWLY into boiling water, and bring back to a boil. Take off the stove , cover, and let sit for 17 min. (Turn occasionally for deviled eggs to center yolk). Pour off hot water, and keep covering with ice cold water until the eggs are cold. Works every time!
