hard boiled eggs that are hard to peel!

All that extra calcium in their diets and all the extra nutrition that get... I get annoyed about the same thing. You just reminded me it was time to go make some deviled eggs though.

I have found that poking a small hole in the fat end of the egg works every time for me. Get the water boiling and as you are putting them in, take a pin and make a small hole in the fat end and drop in on in! I have gone out back, collected eggs and came in and boiled them right away. They pealed beautifully!

I will have to try the salt and see which works better for me!
 
I am testing as I post. I have a pot on each burner with something different in each pot and a fresh egg in each pot. I love to experiment.

It is my understanding that the eggs are too fresh. The watery part of the egg white has to evaporate some. Once this occurs the egg white pulls away from the inside membrane making it easier to peel. If you want to hard boil eggs leave them out of the fridge for a few days. They will "age" faster.

Well I just boiled several of today’s FRESH out of the nest boxes eggs. So far my findings are:

One fresh egg I boiled in just water and nothing else. I tried salted water, vinegar in water, one egg I pricked a hole in the big end of the egg and put it in hot tap water.

All but the egg boiled in the water with vinegar in it, peeled well as long as I ran some cold tap water over them to initially cool them off then put them in some ice water with plenty of ice and let them set for awhile, 15-20 minutes.

Add olive (or vegt.) oil to your water when it comes to a boil and then add eggs...My dear grandmother taught me that. It works great for me. Also peel when the eggs are hot if you dont use oil. Happy boiling Sam
