Hard boiled eggs?

so many techniques, and it seems some work for some and not for others. living here in Colorado i know you have to add time to the cooking due to the high altitude.
 
I'll have to say, mine were about a 1 1/2 weeks old. I'll try some laid the same day and let you know. Might be a couple of days before I have a chance though.
 
i just steamed 4 eggs that were about a week old and they turned out perfect!!! i have a rice steamer that has egg trays, i did bump the steam time to 30 minute due to our altitude. i also will try fresh eggs the next time just to see.
 
i also heard that if you store your eggs on their side you will eliminate the 1 flat end, i will try that one of these days too!
 
If you lay the eggs on their side then the yolk will be off-center. That flat end is due to the air sac that develops as the egg ages. Really fresh eggs don't have an air sac/flat end at all!
 
Well, I've tried steaming newly laid eggs (less than 24 hours old) many different ways and the best I've done is steaming them for 15 minutes then putting them in ice water for 5 or 6 minutes. After pealing they came out about 98% good which was not too bad. As some have said here on BYC it's much better to wait until the eggs are 1 1/2 to 2 weeks old before you steam or boil them. After that time steam them for 15 minutes with a ice water bath afterward for 5 or 6 minutes and they turn out 100% perfect. I've always boiled eggs but after doing all this experimenting I've come to the conclusion that I like steamed eggs better.
 
i have found if you let the eggs sit out for a couple of days before at room temp they peel just fine
 
Yep, I have been steaming since I found this out a few weeks ago. Works PERFECT, just not on fresh eggs.
