Hard Boiled

I use the recipe on here for chicken eggs that are easy to peel.
You bring the water to a boil then add the eggs.
Simmer chicken eggs 13-14 minutes. Quail eggs 6 minutes.
Immerse in cold water, leave until cool.

Perfect every time.

I don't know the official answer, but I boiled mine for 3 minutes and they turned out wonderful, not soft and not green.
 
I have cooked three batches of fresh quail eggs using the instructions on BYC and have not had one egg bust. My wife was very surprised that putting eggs in boiling water did not cause them to bust

I try to let mine sit out for a few minutes usually just til the water is boiling.. Never had one bust..
 
Eggs should be room temp if you are tossing them straight into boiling water. Otherwise the air won't have time to escape the shell as the contents expand. I've actually always been told the opposite and to bring eggs to boiling very slowly to prevent cracks and deformed yolks from the contents expanding too fast. I steam all my eggs now though so it's not an issue. You can't over steam unless you let the water boil out of the pan and it doesn't matter if you add them before or after the water is boiling underneath. They peel 10 times easier than boiling no matter what you do.
