Has anyone butchered a chicken this way?

I have only seen this method used with grouse and pheasants. I did try it on an older isa brown, but it didn't work out. Do you think it would work on a younger chicken or are most chickens just too big? Thanks

Wow. I used to bird hunt with my dad and never saw anything like that. I'll give my next cockerel a try and report back to you to see if a younger bird does any better. I'd suspect with an older bird, they've got too much strong connective tissue to do it easily.
 
Thanks for the reply. Hopefully in a few months I'll be able to try it on some younger chickens.
 
I've processed doves, rabbits, and squirrels that way. I'm not sure it would work with chickens, though. The drumsticks and thighs are so big compared to game birds.
