as others have said, you aren't going to get show quality birds from a hatchery. It's not their purpose. They choose breeding birds by egg production (or meat). Even if they don't cross-breed currently, the criteria isn't "does the bird look like the standard" it is "how many eggs can they produce" or "how quickly will they gain weight"
To say that you are disappointed because they don't look like what you expected only says that you didn't do your homework before you ordered. A hatchery exists to mass-produce birds. PERIOD. To get birds that fit a specific criteria, you need to purchase from someone who shares the same vision as you. It doesn't matter if you are buying chickens, dogs or anything else.
