Terriaki on the BBQ is a favorite here. Next best is pressure cooker fried chicken, Yum!I got him as a rehome from city limits at 7-8 weeks old. He was so tame that first peck from pullets sent him flying to my shoulder for protection. I kinda had a feeling his upbringing would bite me in the butt.
Since then he’s flogged my legs twice.... today when I squatted down to check eggs, he came from behind and was all over my head.
I will now enjoy him with garlic salt and pepper.

If you want to share the recipe I’m all ears.Never tried a pellet grill but I've used that marinade on many forms of meat and with many forms of cooking. Never had a bad result.

That is very much like the teriyaki marinade I make with soy sauce, pineapple, orange and ginger. I use coarse ground pepper in it, too. Young 14 week cockerel probably only needs a few hours, put him in the marinade around lunch time, older do him overnight. Be sure that you give him enough time to rest after you process him. I have been known to process one weekend, and have the BBQ the next Saturday. We had a garage refrigerator at that time, now with less frig space I might process on Wed or Thursday for Sat or Sunday BBQ.Here you go.

I like coriander, but can't get husband to eat it.It's the coriander seed that's the key to this marinade's flavor.
