Have stew meat, but dont want to make stew....

I threw some in the crock pot last week with 2 envelopes of onion soup mix, and 2 cups of water. I made a gravy out of the liquid in the crock pot (corn starch and a little flour) and then put it over the top of egg noodles. I didn't have sour cream either and didn't wanna run out in the weather. It was yummie

Lots of good ideas! My first thought was chili. We use a coffee based chili, rather than a tomato based one. Cook the meat in strong coffee, add onions, beans, peppers and season to taste. It cooks down real nice. Don't drain the beans, you can use the liquid in there for thickening!

Serve it with a big pan of cornbread!

The shepherd's pie sounds really good, too! I've never made one, so I've got to do that!

Fajitas are always a hit in my house.

An Asian style pepper steak and rice might be good, too.

My family is really into casseroles. If you slice the meat a little thinner, season it really well (like taco meat) and cook it til tender, then put it in a casserole dish layering with meat, beans (black or refried, or kidney) and corn, mix a drained can of rotel in with enough mayo (since you are out of sour cream) to make a nice thick sauce, and pour over the meat and beans and corn. Top with shredded cheese and some green onions, and bake at 350 til bubbly!

Good Luck!
