We just put a new roof over the run. It is shaded. We give them cold water several times during the day and they have fans in their coops. The run isn't as hot as it use to be but the one that seems to be panting the most was sick about a month ago. She seems better for the most part now. Other than the panting. We brought her home last night.Agree, shade and cool water, watermelon is nice too. Our birds head right for the tree and shrub boarder next to their coop as soon as they get out, and it's much cooler there for them.
Half of our coop/ roofed run has insulation in the roof, and it keeps the coop a bit cooler in summer, also a help.

We have given watermelon to them in the past. We haven't been able to find descent watermelon this year though.Mine adore watermelon! Their coops and runs are all under shady trees. They spend most of their days loose in their portion of the yard where they dig down into the dirt and flop over, appearing to be dead but actually cooling themselves off a bit.
Two of my hens -- and only two -- enjoy cooling off by standing in the ducks' water dishes.
I no longer run electricity into any of my coops (scary incident some years ago), but I bought a few rechargeable camping fans that I can hang inside from the ceiling and angle towards the roosts.
They have access to water and we put water in their run. I know chickens aren't like ducks but we thought maybe they would want to stand in it and get their feet cool.Make sure they have access to shade and fresh water. You can make a little ice water drink for them with ice and some fruit in water. You can also mist them down to keep them cool.
