When the peahen sit on her egg
Or
I have to use the incubater?
That will depend on if your hen goes broody and wants to sit on the eggs. Some hens always go broody and some never go broody and some will go broody one year but not the next year. Normally a hen will lay 4-8 eggs and she will not sit until she is done laying them. If you can sneak in and put yesterday's date on the egg that will help you keep track, each egg she lays should be dated, when the first egg is 10-12 days old, you should put it in your incubator if she is not sitting on them. If the egg gets too old it will not hatch. If you do not want to take the chance then you can just collect them each time she lays and put them in the incubator once a week, that way several will hatch together instead of them all hatching on different days.
