Hello and Lots of newbie questions

Hi everyone:
A brief summary of why I'm here is that I'm moving to an area where I can FINALLY have chickens and have a lot to learn.
My parents (deceased) had chickens until I was 8. They also raised meat rabbits, which I have also done for the past 50 years and will continue to do. Both rabbits and chickens are prohibited where I live, but I've managed to keep a large herd of rabbits for the 25 years I've lived here without notice.
Chickens make noise and I'm very close to neighbors so I didn't risk it


The property I'm moving to has a large 16 stall horse barn (and we won't have horses) some of which will be used to house the chickens at night

I want to free range the chickens during the day, if possible, but need to learn, of course

I want chickens for meat and eggs and would love advice on the best breeds to choose for both. Preferably those that are not skittish.

The location will be upper New York. I would appreciate as much info as possible to get off to a good start.
