I am in the UK too, I live in South Wales near Cardiff. I am pretty new here too. But it is a great place with loads of really nice people and lots of good advice. Welcome.

A great big WELCOME, CORDELIA! It's lovely to make your acquaintance, even through cyberspace, and I'm sure you'll find that there are MANY wonderful, friendly, knowledgeable people on this board who are generous with their time and expertise. I've been so blessed to have made new "friends" whose faces I'll probably never see, but who are friends nonetheless. I hope to see you around the board!
BTW, gumbo is a southern dish that is similar to a stew. There is a Creole style and a Cajun style, and they're not the same thing. The Creole style has tomatoes and okra in it, whereas the Cajun style has a brown roux gravy base and can be made using seafood, chicken, or sausage (or a combination of those items). It is usually served over rice and goes very with with potato salad as a side dish. My husband is from a small community just south of New Orleans, LA and grew up on gumbo & jambalaya.
