BTW, gumbo is a southern dish that is similar to a stew. There is a Creole style and a Cajun style, and they're not the same thing. The Creole style has tomatoes and okra in it, whereas the Cajun style has a brown roux gravy base and can be made using seafood, chicken, or sausage (or a combination of those items). It is usually served over rice and goes very with with potato salad as a side dish. My husband is from a small community just south of New Orleans, LA and grew up on gumbo & jambalaya.
