My coop has mice on occasion. Do NOT use any poison to remove the pests. I use humane mouse and rat traps. And for what it's worth, I saw one of my hens swallow a hole mouse.
I too have seen my hen eat a mouse but I have used traps like sticky ones but they end up escaping with the foods and I’m scared to use the snap ones because I’m scared my chickens might step on them

Put the snap traps in a box as not to let the birds step on them... and bait the whole surface with peanut butter to attract mice
