All the long, pointed saddle feathers in the circled area are the easy tell. They are male specific. Females will always have shorter, fat, rounded saddle feathers.

Yes, that's what I've been looking at today. These are much more noticeable today. Thank you for confirming! As for the processing, I've had to mentally detatch from the Cornish! no names etc. I assisted my husband on the day and I found the cull upsetting and have done a lot of reflection since. Once the bird was dispatched, I was ok with the rest. Im more prepared for processing the 2nd Cornish. I know I couldn't do it on my own, I'm an animal lover first & foremost. However I understand the Cornish are bred as meat birds, and given the rate at which they grew over a couple of weeks, I know the strain it puts on their organs/body. We never intended to have meat birds and dont think we'll have any more.This is great.
Of course the dispatching part is difficult to reconcile but the way my mind has already accepted this is the fact that your bird actually had a wonderful normal chicken life up until you dispatched her. That is far more than any of the poor commercial creatures have.
I so want to try this for the humane aspects primarily. I just need help with the dispatching as I have yet to kill an animal. I just can't do it myself. I always have help when I have a hen who needs to be euthanized to prevent suffering.
We looked into doing it for a killer rooster we had. I had helped when I was a kid, but I only pulled feathers off after they were dunked. We looked on YouTube for instructions.
