Here's the article that taught me about fermenting a few years ago. I ferment similarly, but in quart jars instead of buckets, and I use Kalmbach's Henhouse Reserve with whole wheat, oats, and a bit of flax and chia seeds. If you have questions about that, I'd be glad to answer. :)
