have you ever grilled quail before ?
for me, the only way I can handle quail or dove is fried like chicken.
Most people don't have the aptitude or patience to hand pick feathers off a
flock of small birds and just just do a quick pull and separate the breast and
discard the rest.
This leaves a skinless piece of meat that, if put over hot fire, will dry out
extremely quickly into shoe leather - not fit to eat.
I think that you can grill it half way done for the wood flavor - then transfer the
meat into a skillet of hot onion & mushroom gravy for 30-45 minutes,
then, pour that over your favorite rice or mashed potatoes - mmmmmmm YUMMY !!!
side dishes could be baked beans, cole slaw, potato salad, etc
you can search the internet (youtube) for excellent recipes and cooking tips.
I can eat 4-6 bodies deep fried like chicken with the side dishes of your choice.
same with squirrel, etc.
