Help! Aggressive male quail!

I'm thinking of putting all the wood at the far end of my smoker/grill and wrapping them with bacon and adding chopped green onions ,diced mushrooms and a few select seasonings and butter and will wrap them in foil. Jay
 
have you ever grilled quail before ?

for me, the only way I can handle quail or dove is fried like chicken.

Most people don't have the aptitude or patience to hand pick feathers off a
flock of small birds and just just do a quick pull and separate the breast and
discard the rest.
This leaves a skinless piece of meat that, if put over hot fire, will dry out
extremely quickly into shoe leather - not fit to eat.

I think that you can grill it half way done for the wood flavor - then transfer the
meat into a skillet of hot onion & mushroom gravy for 30-45 minutes,
then, pour that over your favorite rice or mashed potatoes - mmmmmmm YUMMY !!!
side dishes could be baked beans, cole slaw, potato salad, etc

you can search the internet (youtube) for excellent recipes and cooking tips.

I can eat 4-6 bodies deep fried like chicken with the side dishes of your choice.
same with squirrel, etc.
 
When I go quail huntin out here in Arizona we usually feild dress them then put them in foil with lemon, onion, cubed bacon, garlic, fresh rosemary, butter and salt and pepper and cook them in the camp fire coles for 35-40 minutes, sides are grilled corn on the cob, camp beans and hash made from potatoes,onion,garlic and peppers.
 
I put virgin olive oil with herbs and spices on them pretty heavy after brining them for two days in the fridge.
Then wrap with bacon and smoke them with low temp/heavy smoke for four to six hours, finish off on a preheated grill or oven till done.
During whole process, basting as necessary to keep moist.
 
My grandpa use to cook his in beer with onions, garlic and whatever wild herb he can find, hes native american. Yall are making me hungry im at work and I see bob whites runin around all over the place. Thete teasing me lol.
 
If nothing just filet out the breast meat... wrap em in bacon with a jalepeno and cream cheese.... make sure to cover all 4 sides with the bacon and put em on a scur... grill till bacons done.... i cant stop eating kabobs like that.... i just look at my birds and my mouth waters!!!
