As an update to my temperature dilemma...I purchased a used Grumbach S84 analog incubator
It didn't have the original mercury thermometer or dial hygrometer, but came with a remote temp probe used for reptile terrariums. Just to try it out I placed some of my refrigerated eggs I was pretty sure were fertilized (might have been but found out they were too old) and a three fresh ones. My chickens are molting so I have very few eggs for experimentation. I put a couple of humidity/temperature monitors on the top shelf, and watched them compared to the digital probe on the bottom one. Still had some temperature variation in it. The refrigerated eggs weren't any good, but the other three hatched out at around day 19-20. A little early but they are doing well. Had a couple of temp spikes to the 101-102 range when I didn't refill the water.
I used the remote sensing infrared on the eggs for monitoring when I would candle them, and was amazed at how much of a temperature variable you would see from one egg to another and where the temp probe was aimed. That could have been because those eggs weren't any good, though.
