Another tip..... Neck makes THE BEST roast. Low and slow. No cleaning, or trimming. No searing. Just plop it right into a crock pot with some beef broth and bouillon. Season with salt, pepper, garlic, onion and it's done in no time. Took a couple deer to mom's to butcher. Put this neck in as soon as I got there. It was done by the time we were on deer 2.
