I took out boneless chicken breasts tonight. Anyone have any different but not too difficult recipes that I can make tonight. Tired of the same ole same ole.....
 
I put them in a casserole dish after spraying it with cooking spray. Then layer ham over the top. Then layer cheese (Swiss or mozzarella) over that. Then I bake it. Cheaters chicken cordon bleu...
 
Chicken Hoisin:
Dice the chicken, saute in veg oil with onions, green peppers, baby corn and broccoli. (I have used frozen veg mix, in a pinch). Season with garlic, white pepper & soy sauce. Add 2-4 tbsp. of jar hoisin sauce and 4-6 tbsp. of ketchup (yeah, ketchup). Serve with rice.

Get some crumbled Feta cheese and a tub of pesto sauce. Mix it together in a bowl.

Slice the breasts lengthwise & stuff the mixture into them. Secure it with a toothpick. Coat the tops of the breasts with olive oil & a little butter. I also sprinkle a little garlic powder, thyme and rosemary on the tops. I bake them for about an hour at 350.

It’s SOOO good!

I use them for several things. I cook them on my george forman grill, along with some bacon, then make a sandwich with toasted hamburger buns, bacon, cheese, lettuce, tomato, and ranch dressing, its kind of like the one from McDonalds. I also saute them in butter, then shred them with tongs and a fork (they are too hot to touch) and cook some pasta (any kind) I add rotel, cream of chicken or cream of mushroom soup, and velveeta cheese. Sometimes I add a can of english peas. I also saute them in butter and onions, shred or chop them up, cook some minute rice, add the chicken and some soy sauce in a skillet, cook for a few minutes to heat everything, and youve got chicken fried rice.
 
They all sound so good! however, no swiss cheese, no hoisin sauce, no pesto sauce, no buns. I guess it's just not my lucky day, but I know what to put on the grocery list now.

Last night I made chicken nuggets out of our chicken breasts. I got an awesome, easy recipe from Rachel Ray. You can probably google it, she call's it Chicken Toes. If you can't find it, I can post it for ya.
