One of my sapphire gems is not doing well, she sounds like she's having a hard time breathing, she won't eat and shes not producing normal eggs, no she'll just the membrane it seems any ideas on what I can do or what might cause it

She may be suffering from a reproductive problem, such as impacted oviduct or infection that is affecting her shell gland. Has she or any other chicken had any respiratory symptoms recently? A respiratory virus sometimes can cause that, but it also is common in some chickens. Does she sneeze? I would try giving some calcium—1/2 tablet of human calcium or Tums daily giving orallynor mixed in some egg, to see if the shells are improved or if she lays easier. Make sure that she is drinking plenty of water as well.

I've only got two freerangers and the other is healthy as can be, I'll try the calcium to see if it helps... I don't wanna let her suffer if she's not gonna get better though

If the calcium does not help, some try antibiotics early on to treat any possible infection. Some of these chickens stop laying eventually, while some continue to suffer problems. It is a common problem in hens. Here is some reading about impacted oviduct and it’s possible causes:
