Help with sex please

Dominiques aren't "hybrids" but an actual breed with a SOP.

These aren't Doms. They're Barred Rock pullets as they have single combs. Doms have rose combs.
I have a really dumb question. When refering to a chicken as a pullet, is that a hen? Or is pullet a generic term for young chicken?

Not a dumb question, just a newbie one:

Chick- any baby chicken
Pullet- young female, generally up to one year
Hen- mature female, 1yr+
Cockerel- young male, generally up to one year
Rooster- mature male, 1yr+

@TooCheep already gave you the right answer.
I just want to add that,
that's actually a very good question. If more people understood pullet, cockerel, and straight run, there would be fewer "roos" (a term many hard core chicken breeders take offense to) listed on Craigslist.

Not a dumb question at all! Only dumb question is one you already know the answer to.

Looks like you've already got your answer!
