we've been refering to it as the "Hey Sailor!" maneuver...
 
Ive been calling it a 'sit' but i do enjoy when they do that! So far, only two of mine sit for me which makes it very easy to catch them. Also, sometimes ill scratch them down the spine then squeeze the tail bone a little then they will get up, fluff all their feathers and run off! I find it entertaining.
 
We call it "the curtsy"
That is really cute! Makes the whole thing seem much more lady like. I have a Barred Rock whose name is Lil' Peeps but I call her Peeper for short. All I have to do is be within 6 feet of her and say "Peeper" and she does the 'curtsy'. So funny.

A lot of people take it as a puerly mating behavior but it is also a submissive posture. Kind of a physical declaration of saying "I know you're boss!"

We always reward the 'curtsy' or 'sit' too, although we call it "squatty girl". When they do 'squatty girl' we give them a scratch on the back andthey frill their feathers and shake like a wet dog. Sometimes they will shake so much they will lose their footing and stumble. Really funny.
 
All of our girls that are laying do this for us. We call it the egg squat, but from here on out, curtsy it is! We too "reward" the behavior by scratching their backs. We love to see them puff up and shake. Ours even kind of wag their tails after! We get the biggest giggle fits out of it! One of girls even sprays clear liquid whenever my husband picks her up...... She must really like him! *wink, wink, nudge, nudge*
