I have not tried any of these yet, but they sound good.

Baked Eggs
3 Tbs. margarine
3 Tbs. flour
pinch of salt
3/4 tsp. prepared mustard
1 1/2 c. milk
1 1/2 c. grated american or cheddar cheese
1/4 tsp. tabasco sauce
6 or 12 eggs

Melt the margarine. Blend in the flour, salt and mustard. Add milk and cook stirring until mixture thickens and comes to a boil.Remove from heat and add cheese, stirring until cheese melts. Stir in tobasco. Divide this mixture into 6 individual baking dishes.Break 1 or 2 eggs into each dish. Bake at 350 degrees until eggs are set, about 12 minutes. makes 6 servings.

Sunny Scalloped Eggs
2 Tbs. margarine
1/4 cup flour
1 1/2 tsp. salt
2 cups milk
6 hard boiled eggs, sliced
3/4 c. shredded sharp cheddar cheese
2 cups of buttered soft bread crumbs

Melt margarine in saucepan over low heat. Stir in flour and salt to form a smooth paste. Add milk gradually, stirring constantly. cook until thickened,stirring frequently.Stir in eggs and cheese. Remove from heat. arrange layer of buttered crumbs in greased 1 1/2 qt. baking dish, then a layer of creamed eggs. Alternate crumbs and eggs making top layer a garnish of crumbs.
Bake in 375 degree oven for 20 minutes. Makes 6 servings.

Baked Eggs and Bacon
7 to 9 strips of bacon
6 eggs
4 Tbl. of grated parmesan cheese
1 Tbl. butter, melted
1/8 tsp. of tobasco sauce

Cook bacon until partially done but not crisp. drain.Place 2 or 3 strips in each ramekin. Carefully break 2 eggs into each dish. Sprinkle with grated cheese. combine melted butter and tobasco. Pour over eggs. Bake in 350 degree oven about 15 minutes, until eggs are set. Makes 3 servings.

Oven Omelet
8 slices of bacon
5 eggs
3 Tbs. flour
1 tsp. salt
2 cups milk
parsley (opt.)

Cook bacon: drain and crumble into bits. while bacon is cooking, prepare eggs. Beat eggs until light and foamy. Beat in flour and salt. Add milk and beat again. Grease bottom of 1 qt. casserole dish with bacon drippings. Sprinkle crumbled bacon over bottom of dish. Add egg mixture. Bake in 375 degree oven 30 to 35 minutes, or until mixture is set. Can garnish with parsley if desired. Can also garnish with spring onions. Makes 4 servings.

Sausage with Scrambled Eggs and Cheese
1/2 lb. of brown and serve sausage
2 Tbl. butter
2 1/2 Tbs. of finely chopped onion
2/3 c. milk
8 eggs
1/2 tsp. worcestershire sauce
1/2 tsp. salt
1/4 tsp. pepper
3/4 cup shredded cheese, sharp or mild

Place brown n serve sausage in skillet.Cook sausage until done. Do not overcook. Remove and put on hot platter or brown sausage slowly while making eggs and cheese mixture in another skillet. To prepare eggs, melt butter in skillet. Add onions and cook until they are soft and clear. Combine milk, eggs,wor.sauce, salt and pepper. Beat slightly to blend ingredients. Pour into skillet. When eggs begin to set, add cheese and blend well.Continue to stir until eggs are cooked. Serve immediately with warm sausage. 6 to 8 servings.
