Thank you again for sharing. There are not any other opportunities to see "real" Catalanas. Seams like there may only be 4 breeding flocks (other than two hatcheries) in the country. One in NC, one in SC, and 2 in Ca.
There will be one established in Nebraska this year, and possible another in the Midwest this year.

If anyone ever hears of another, I would like to hear about it.

How long at 15 psi?

Have yoy tried lightly freezing the carcasses before grinding??

Chicken bones...no more than 10 minutes at 15 psi.

Beef and deer bones....40 to 50 minutes at that pressure. But it's worth it. All that 'bone meal' and other minerals.

My dad bought a BUNCH of equipment at plant closings and auctions in the 60's and 70's. I have two Hochmeyer ball mills. One he bought from Porter Paint Co in Louisville Ky. and another of the same size (45 gal) he got from Athey Paint Co in Baltimore MD.

Also a floor model Hobart pizza dough mixer, commercial meat band saw, and the commercial grinder. Great Machine! I could run a person through that thing...but I never did...promise !

He bought three 55 gallon stainless steel crab steamer pots from Auggie's Crab House near Baltimore when Auggie got sick and sold out.

And other nick-knack paddy-whack stuff.

Add to that...he installed a walk-in cooler and walk-in freezer....He left me a lot of stuff to get dirty and have to clean up!

NO freezing before grinding... not required. It even smunches the feathers.

They have tiny heads and the males wings point down. You can only see so much in a picture, but those two items are easy to see.

Yes, but they are much better than the Aussie birds. I think those two things
would be easier to fix than a huge general structure like a 13 lb. bird. Whaddayathink?

What bothers me is the front end of the cockerel they have. I really don't like that bird at all. Why would this breed need to be imported?
