I forgo most high carb foods most of the time. I eat a fair amount of clean meat, lots of eggs , repeat lots of eggs and beef and some vegies and small amount of fruits. I no longer have the afternoon slump; my energy is high thru the whole day; the sleepless nights are gone gone gone. I can put a dog out in the middle of the night, lean against the door waiting for his return, then walk back to bed and I"m falling asleep as I lay down. I acheived all these changes with in a week of dumping all high carb foods ( no potatos, no rice, no breads, no pasta) and eating just enough vegies for about 20 carbs a day. THese days I eat much more carb than that but not the huge helpings like I used to. NO going back to the standard AMerican diet for me. I will keep the fresh meats and eggs and green salads with mushrooms and scallions and salad dressing. I'm 40 pounds down and aim to keep it off. I eat more of the "wild" foods like prickly pear, arugala, alfalfa sprouts. Often trying new vegies. I never bread my meats with a grain product; instead I use ground almond flour in my cakes. With plenty of real butter, cream and olive oils. My kids rarely eat pop corn,; popped sorghum tastes just as good.THat nutty flavor. Kids like cut oats instead of oatmeal. I'm with you Karen, bye-bye wheat. Lots of choices on the market these days.
