I agree with you about the crock-pot! I have 2 different sizes, I use them all the time. What a great invention!

I decided on a fresh lettuce salad with onion, pickles, hard boiled eggs, cubes of pepper jack cheese, carrots, cucumber, tomatoes, crumbled bacon and warm seasoned chicken cubes. I made French dressing too.

I also baked a loaf of jalapeno bread.

Its hubby's Friday so I will serve a glass of wine with it.

The crockpot was calling me this morning, before DH and I left for our class ..but I got caught up messing with "kids" and ran out of time. I thought about tossing some chuck and tomatoes in there, with some fresh herbs, etc. ..and letting that work itself into some sauce for a couple meals this week .....spaghetti ..lasagna ..and so on. I may still do that

I've been craving Carbonara for the last day or so ..may have to make that and something roasted for the entree..... hmmm.. I have enough fresh Arugula here, too ....I can wilt that with some other fresh greens ..add some walnuts and shallots.

Applesauce Cake

2 cups all-purpose flour,
1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons baking soda
1 cup raisins
1 cup chopped walnuts
1/2 cup melted butter
2 cups applesauce
Preparation:
Directions for applesauce cake.
Into a mixing bowl, sift together the dry ingredients. Add raisins, chopped walnuts, melted butter, and applesauce. Beat until well blended. Pour batter into greased and floured 9-inch square pan or 11 3/4 x 7 1/2 baking pan. Bake at 350° for 45 to 50 minutes. Cool and spread with cream cheese or butter frosting. Or just top with sifted powdered sugar
 
redfeathers- I made applesauce cake yesterday also!! I didn't put rasins in though DH doesn't like them.

I also made freezer bread-4 loaves, out on the range cookies, and flour tortillas.

For dinner, I made homemade eggroll wrappers and put a hamburger filling in them, fried them and served them with bbq sauce and cheese sauce and wine for DH and I, milk for the Gkids.

Tonight, chili mac with cheddar and parmesan on top. I'm using homemade chili I made last week.

chickenchick- Please on the jalapeno bread recipe.

I'm not sure what dinner will be, but I made a full pan of Cheese 'n Onion biscuits!

last night was easy night, homemade cream of tomato soup and grilled cheese. Tonight was a treat, got a take home pizza from Walmart today. I made a chocolate cake in the bread machine, ok it was easy but its just a bit more tiny than I expected but I guess that just means there wont be 2nds setting around.
 
All of these meals sound delicious...making my mouth water, and it's only 9 am here!

I think tonight I'll do a crockpot beef stroganoff, maybe some corn or another type of veggie. I've really been craving corn for some reason lol!
