Backyard Buddies... I would have to taste the sauce probably, to know for sure ..but I'll look around my recipes and see if I can find a few "different" ones that may be it. Sounds yummy! One of my favorite beef dishes is infused with fresh orange (little juice, some zest) ..and it is AWESOME!

Now, I'm hungry..
 
lol if you call scratch as in boiled macaroni shells,melted velveeta with some milk, stirred togather, scratch, then yeah! from scratch!!
Think next time I'll make it with some corn or other veggie in it. Figured Jim would eat it but not enjoy it, he turned around and said Is there more? How much more? lol Guess he liked it too.

OOOO I bought me a new cookbook today. Haven't looked yet to see if there's anything in there I'm willing to try.
Trust me, I need all the cookbooks I can find. lol​
 
The recipes for the Vietnamese dishes are posted on our recipe site.

BB - I can't find any Vietnamese dishes that meet your description, sorry. The closest was one using grilled, seasoned minced beef, rolled in a lettuce leaf and dipped in nuoc cham sauce. Let me know if you want the recipe and I'll post it on the other sight. If I get a chance this week, I'll try to call a fellow chef who is well versed in Vietnamese cooking, she may know.

Redfeathers - great minds, but I'm a day late! Ham and scallops are tomorrow night's dinner here, green beans and cookies for dessert.

French dip sandwiches for us tonight. Used up the beef roast from Christmas dinner.
 
That's funny Redfeathers and happyhen! We had ham and scalloped potatoes for dinner as well, but we had it with peas and carrots but no pie or cookies. I'm feeling left out in the dessert department!

Thanks Annesa's Muse and happyhen for your thoughts on the Vietnamese dish that we had in Paris. Unfortunately, not only was it written in Vietnamese, which I don't read, but the translation was in French, with which I have only a moderate understanding. If you can figure it out, I'd be grateful. It wasn't minced beef, though that sounds yummy too, but rather a thinly sliced and marinated beef. It was very tasty, one of the more memorable meals I had in Paris, and that's saying a lot!

Congrats on the new cookbook, skand! I love cookbooks! Which one did you get?
 
BB - If you can, send the French description of that memorable dish. I have limited French conversational skills (Where is the library?

), but I am conversant in the French culinary language and may be able to figure it out. Then again, you may have been blessed to have found a very gifted and talented chef who created a "signature" dish that can never be duplicated.

My husband's cousin's wife, who is not only Vietnamese but also a trained cook, couldn't come up with anything either. I'm sorry I can't do the French description for you since it was a while ago and I no longer recall what was written. I wrote it down at the time, but where that is now is a mystery. I can tell you that it was on the menu and the gal we were dining with had enjoyed it on a previous trip to this restaurant. Looking at a map of the area, I believe the restaurant was on Rue des Carmes. There is currently a Vietnamese restaurant on that street called La Paillote d'Or, but I don't recall if it is the same restaurant we visited in the early 90s.
 
This sauce thing is wracking my peanut.. (da brain, da brain)

What was the consistency of the sauce? Was it thick or thin? Was it sweetened with tamarind or brown sugar? Was any part of the liquid a rice vinegar? Any distinct flavors that it had?

I have a few sauces in mind, but need more details
