Hey Grandpa, What's for Supper? Part 2

Sounds yummy, chicknmania!

Tonight was salad bar supper - two kinds of greens, lotsa different veggies, chicken breast, and crumbled blue cheese. Only one of the kids was here for dinner and he declared it "the best" which makes his mom proud! His sister will be jealous that she missed it.

Hi all!! Everyone must be very busy, I had to dig deep to find this thread again!

Night before last was DS birthday so I baked him the Lasagna he requested. Last night he made chicken and cheese Quesadillas with the Quesadilla maker he got for his birthday. Tonight is meatloaf and hash browns. I also baked some bread and will serve a salad too.

Happy bday to your DS, thechickenchick!!! I love giving them the choice of their supper for their bday as well. Usually, they pick Chinese Chicken Salad.

Let's see . . . .
Monday - Roasted Salmon with garlic, organic grains blend, peas
Tuesday - Vegetarian Bean and Barley Soup made with tons of veggies, salad, Cornish Splits
Wednesday - B4D (of course)
Tonight - Chicken Pasta Primavera, Salad, and Rosemary Garlic Bread
 
Funny! I didn't know the thread had died- went to look for it and it was on top!

We're having 3 bean soup, and sweet potato, spinach, cranberry-white cheddar bread pudding with caramelized onions.

I'll probably make seared garlic mushrooms, too.

It's a modified version of a recipe in Bon Appetit: I didn't like the original, but I can't tell you exactly the amounts I used when I altered it.

I
use a cranberry white cheddar, lots of fresh garlic, sweet potatoes rather than squash (just because it's on hand), thawed frozen chopped spinach rather than kale (again, on hand), and I use whole grain bread in smaller chunks.

It's not a strong dish- complimentary, and not something you can eat a lot of, so it won't work as a main dish.

Very good, but very mild and rich.
