Hey Grandpa, What's for Supper? Part 2

Yesterday was husband's Birthday and of course the restaurant that we wanted to go to was closed. So once again All Recipes.com came through and I made this really good Calm Chowder. The only thing to change was cook the butter and flour mixture for about 5-10 minutes to get the raw flour taste cooked out. This recipe was rated 4 7/8 by 543 people. I will make this one again for sure.

Tonight is enchiladas.

simple tonight, scalloped potatoes and ham in the crock pot. I think im going to go soon and peel some apples for another cake.

Last night was leftovers from Prime Rib dinner on Sat. Tonight Peppers stuffed with Tilapia and Spanish Rice on the side. Although it has been so rainy here the last few days - soup is sounding really good again.

Speaking of rain how is everyone fairing out there with it, especially those of you in Southern California. Our poor chicken run is pretty flooded and the chickens are staying in most of the day.

Last night I had an entire dungeness crab with drawn butter and a refreshing mixed drink which was along the lines of a margarita. Pure bliss - if you are a serious crab lover.

Tonight is anyone's guess, but since it is easy and delicious I will probably be making my version of french onion soup again.

We are having a clean out the fridge night tonite. We are snowed in!! We got around 5" of rain mon., 6" of snow yesterday. about 2-3" last night, about a foot today!!! We have been having tremendous wind all day-75 mph wind gusts! 35 mph sustained wind (at least). Our chickens are NOT happy campers!! Our dogs are loving it though. Schools got out at noon yesterday and no school today, probably no school tomorrow and maybe all week, We are expecting several inches of snow tonight, tomorrow, tomorrow night at least. Tomorrow night will be pork loin roast, twice baked potatoes, and a veggie.

I'm with all of you guys on the soup talk. Nothing like tossing the ingredients in the slow cooker and smelling it cook all day. A salad and some bread on the side and it's good to go!

I was also wondering how you all are doing with the rain. I though of you, Monica, when I saw the reports on the news of them closing the Grapevine. Stay warm and dry! My run is also swamped. The chickens had done a nice job of digging a good hole for dust bathing and now I suppose it's their own swimming pool. Sheesh! We've gotten a LOT of rain here and have experienced flooding here in there in our town, including some cars nearly submerged. Thankfully, we're on a higher elevation where we live, so it's been manageable so far. Tomorrow is supposed to be a big one!

It was breakfast for dinner, of course. With the weather, we all voted for nice steaming bowls of oatmeal. Yum!

I don't know as much about carbs, though I know that Ninjapoodles does. She used to post to this thread but hasn't in a while. Some ideas . . . . salads with lean meats like chicken breast. Add lots of veggies that you enjoy, including some new ones that you wouldn't normally have on your salad, but that would give you more vitamins and keep the meals interesting. Going vegetarian for some of your meals will save you not only fat and calories but will also save you money without the expense of the meat. Watch for sales on chicken and fish and stock up in your freezer. Divide them up into portions so that you can pull out only what you need. When I buy the bigger packs, I'll cook one meal and often boil or bake the rest of it for use in salads or soups. Black beans can be combined with diced zucchini (when you have too much of it in the summer!) and seasonings and make a tasty burrito filling

I love using unexpected sides. One of our favorites is quinoa, a South American grain-like food that is considered to be a complete protein and thus is good for vegetarians and vegans. http://en.wikipedia.org/wiki/Quinoa and http://www.quinoa.net/181.html It's getting more common and therefore the price is coming down some. I usually get mine at Trader Joe's but recently saw it at Costco. If it's gotten to Costco, then it's definitely getting more common!

I'll often make use of leftovers in my cooking to create other dishes. If I cook up a whole chicken in the crockpot, it might make a meal of chicken the first day, and the leftover chicken added to soup, salad, or Mexican food another day. The broth formed in the pot is strained, refrigerated, and skimmed of fat, then made into soup a couple of days later. And, like Monica is doing for dinner tonight, we try to schedule a leftover day each week so that nothing is wasted and money is saved.

Yes, we are bracing for the big one too, but not as bad as what they say Southern California will get. We lost a couple of panels out of the green house yesterday. Fortunately, husband is at home during the day so he can keep an eye on it. Backyard Buddies I know what you mean about the dust bath holes, my girls have 3 private spa swimming pools now. Although husband said that they stayed inside most of yesterday. cknmom hope your girls are OK too, as well as everyone else here at BYC.

Have you ever tried "steel cut" oats (you can get them at Trader's Joe's the ones from Ireland). We discovered them in an effort to reduce cholesterol and they are really good. Reminds me of barely and they have a nice chewiness to them, some brown sugar and YUM! Also, we make extra and bring them to work - microwave for a minute or so and they are great reheated.
