Hey Grandpa, What's for Supper? Part 2

Last night was homemade chicken soup with a mini bow tie type pasta and a ton of vegetables. One of my co-workers was coming down with a cold yesterday and thought I'd use the good ol' chicken soup thing to help to keep us from getting it. So far so good - wish us luck. Tonight I'm doing a ditto of what Back Yard Buddies had for her dinner last night. We need to get more fish in our diet.

Good for you, Dragonfly Ranch! We should all eat more fish. It's good for you in so many ways, though it's good to not eat too much of the kinds that may have high levels of mercury. http://www.epa.gov/fishadvisories/advice/

I made so much salmon last night that I have a quite a bit left over so made a couple of salmon tacos for lunch. Yummy! What sides are you having with your fish? I ended up with a brown and wild rice blend, steamed green beans, and carrots. The kids love when I make these carrots. Boil some baby carrots as you normally would, then drain them. Put them back in the pan and add some butter (a little bit is fine - I use less than a teaspoon for the 4 of us), a couple T of brown sugar, and a few shakes of some dried dill. Turn back on the heat and toss the carrots in all that goodness until it's all melted, then serve. The slight sweetness from the sugar and spice from the dill is a nice combo.

Tonight we're having a mixed bean chili, salad, and maybe cornbread if I can motivate myself to make it.

Seven years ago I lost 60 pounds by watching portions and increasing fiber into my diet and slowly over years have put a few pounds back on. As you can see I need to focus on our diet for several reason and there is no better time then the present.

Also, we grow our own carrots and I make mine the same way. In fact I served them for Thanksgiving and everyone was crazy for them. I made a new Chutney out of the carrots that is so divine and I just loved the name of it "Golden Gossip".

It has been really mild today and we are expecting weather later on this week I decided to smoke some ribs and a pork loin. They should be done in 2 more hours and I plan on serving potato salad, made with my yummy eggs, and baked beans. I've been smelling this meat all day and I am HUNGRY!!

think it's great that you're striving for better health. The payoff is huge!

I have used the quinoa is the past and need to revisit it again. Not sure what to have tonight. Forgot to take out frozen pork chop for dinner. Have been wanting to do quick meals, since I'm really focused on this new beading project and all I want to do is get home and bead. Of course, that is after I put the chickens away for the night.

Buffalo tacos.

As a snack I also have fresh beets which are roasting in the oven I thought I would try this beet salad recipe:

Roasted Beet Salad with Celery, Onion and Fresh Lemon
(makes 2-3 servings)

4 medium beets, roasted, peeled and sliced into wedges
1 celery stalk, finely chopped
1/4 cup red onion, finely chopped
juice of half a lemon
1 tablespoon extra-virgin olive oil
sea salt and black pepper to taste

Combine all the ingredients in a bowl and toss. Cover and chill 30 minutes before serving.
