Hey Grandpa, What's for Supper? Part 2

Crabcakes.......I've been in the hospital too long! I want crabcakes. Crab something will be on my menu when I'm home next week--I'd been thinking seafood enchiladas, may go that route instead.
 
Gotta find me a recipe for seafood enchiladas!
Now that I have a good chicken enchilada recipe, seafood sounds good.

The problem being I'm going to have to find a place to buy good seafood - not much ocean frontage here in Wyoming!

I always have to mess with stuff, though. I added a can of the green enchilada sauce to the sauce in the recipe. The color is less than appealing, but the flavor is great. I also cut back the fat in the recipe sometimes, using milk instead of half and half. It's a good starter recipe.

I use imitation crab meat and frozen shrimp. Not gourmet, but good enough.
 
So on the drive home today my husband admitted he's not sure anyone ate a vegetable the entire time I was in the hospital

So, beef stew just chock full of veggies tonight! With cheesy drop biscuits.


I did find a partial can of green beans in the fridge, apparently Sugar Monkey needed something leafy green, not gummy green. Whoda thunk?
 
We are having seasoned tilapia with fresh dill sauce, baked zucchini chips, cucumber dill tomato salad, and frozen peanut butter pie for dessert

-fresh spinach and spring mix salad with cranberries, walnuts, goat cheese, diced apples, and raspberry vinaigrette dressing. -rosemary bread. -pineapple boat filled with sliced kiwi, banana, cubed pineapple, orange slices, blueberries, and blackberries for dessert.
