Hey Grandpa, What's for Supper? Part 2

My son is whimpering, how do make such a delight?
Meatloaf is his favorite comfort food. If you add bacon and mushrooms and swiss he might go into a stupor.

12oz bacon, diced
4 med white shrooms, chopped
1 sm onion, diced.

Sautee these. Add to your basic meatloaf recipe with 6 oz shredded Swiss cheese.

The original recipe says to reserve some of the bacon mixture and cheese to sprinkle on top the last 10 min of baking. We didn't really like the Swiss on top, so I mix it all in and lay a few slices of bacon over the top during baking.

If you don't have a meatloaf recipe, this is loosely mine---
1 1/2 lb ground beef
1 egg
1/4ish cup milk
large handful oatmeal. If you want to use breadcrumbs I think it's about 1/2 cup. I just like the oats better.
season as desired--salt, pepper, garlic, onion, Worcestershire sauce.
form into a loaf, bake 375 for an hour, check temp, sometimes it needs another 10-15 min.


We love the bacon Swiss shroom recipe. I buy 5 or 10 lbs ground beef at a time and make up several loaves and freeze them. I use the same basic recipe for meatballs--also a big hit!

I use oatmeal too. I sneak healthy in when ever I can. I doubt it negates the bacon and cheese, but comfort food is comfortable for a reason.

I will make two loafs at a time with the idea of freezing one, but they become breakfast and sandwiches and *Poof* they are all gone.

That's why I only cook one at a time! My guys still draw the line at eating raw meat, so if it's not cooked it's safe.

The meatballs are a challenge to get enough to freeze though. I bake them, leave them on the cookie sheet to cool enough to flash freeze--it's like I've put up a sign saying "Buffet"!
 
Rachel, I intend to try that recipe! Tonight we will have stuffed peppers (already cooked and frozen), mashed potato pancakes, carrots, and yellow summer squash.
