We butchered roosters yesterday. I wish I had known we were going to do that earlier as I have been cleaning out a freezer to defrost it and thawed out a 10lb bag of leg quarters. So, yesterday I cooked and deboned 4 roosters....then had Big Boy fire up the grill and bbq all those leg quarters. I was thinking how I don't want to see poultry again on the menu for a good week or so....then just about cried when I remembered I'd also thawed a big ol turkey

So, bbq chicken last night, creamed chicken over tots tonight, and turkey tomorrow

. Pretty sure that turkey's getting deboned and in the freezer....I'm eating beef or pork for a good few days after this...or seafood maybe....just not poultry!!!

I will cook up a big lot of turkey or chicken and freeze it cooked. I also do that with large pork loins and beef roasts- slice them for sandwiches and portion them out.. it makes those, 'oh darn. I forgot to plan something' days easier. I can cut out the cooking time.

I do a lot of meal prep/freezer cooking type stuff also. I don't do the "real" once a month cooking, or often even full meals. I do lots of prepped/cooked meats, things like that. You're right, makes things so much easier for those nights.
 
tonights dinner 2 of the little small pizzas one for me and one for the daughter. The misses went out of town to work at another store and won't be back til 8 so hopefully she already ate.

The chickens are starting to crank out the eggs, I think egg salad and.... um... ah... dunno.
more egg salad?
tossed salad, egg salad and squash soup. yeah.

(I LOVE egg salad. It is my comfort food,)
