Hey Grandpa, What's for Supper? Part 2

Blooie--I'm sensing a Pie theme on Christmas Day!

I'm with Stephanie, I just can't do the okra. I've tried it several different ways, some folks in my extended family just love it, but I simply can not do it. Not so much for eggplant, either.

So, tonight will be Nachos. With lots and lots of guacamole

Tomorrow is the prime rib, mashed taters, green bean casserole, rolls, not sure what will be for dessert. Probably something apple and something pumpkin, those seem to be favorites. Although I'm thinking lemon sounds good, too......
 
I debated about switching the annual ham at Christmas with the annual prime rib for New Years, but I was outvoted. The kids like it just like it is! I dearly love a good prime rib!! I'd do one for Thanksgiving, Christmas and New Years if I could get a way with it. Your meal sounds just delicious, Rachel!

Christmas day is definitely a "pie themed" day. Because Kenny always has to work until 5:30, then needs to come home and shower, we don't eat Christmas Eve dinner until around 6:30 or 7. We want everyone to be together if we can, even if it means a late Christmas Eve. Well, by the time we're done eating, nobody wants to chow on the pies right away - most of the time anyway. And the kids are clamoring to open gifts after dinner, so who wants to send them to bed all sugared up in addition to the excitement of the presents?

So, we learned to compromise. We do Christmas Eve at Tammy and Evan's and open our gifts to each other and to the kids. Christmas morning is "Santa Claus" time in the kids' homes. Then at lunch time everyone comes here and we have little leftover hammiches, whatever else was leftover, and enjoy our pie on more comfortable tummies. Seems to work best for us, even though it means that tonight I have to eat well past my 2-3 pm time frame. Ah, the sacrifices I make for my family!

Our prime rib was so, so good! We don't eat beef besides ground beef and the occasional chuck roast, so this was a real treat.

I need to get another freezer and buy half a beef. That's about the only way we'll afford it.

Dinner tonight was orange chicken, stir fry veggies and fried rice. I used Pioneer Woman's recipe for orange chicken, just didn't batter it in the cornstarch. The sauce wasn't as orange-y as I'd wanted, but it was still good. My stir fried veggies were wonderful, the leftovers may have to get made into some egg rolls with some shrimp or pork during the rest of Christmas break.
 
Last night I made some really good chicken thighs. Roasted skin down for 30 min, then started basting with a mix of sugar free bbq sauce, sugar free peach preserves, and garlic. Flipped and roasted and basted another half hour-ish. They were so good! Served with a nice salad and corn muffins.

tonight is an Italian style meat sauce with lots of veggies and ground beef. I'm sure there's some name for it bit I have no idea what it would be called. Served with low carb "cheesy bread".
 
Tonight is seafood chowder. Maybe sourdough biscuits? Need some type of bread to go with it, and I have this wonderful smelling starter I need to use or stick in the refrigerator.
 
Last night was leftover roasted chicken, oven roasted cauliflower with garlic, green salad. For 14 years my husband and I have made Shrimp Fra Diavolo for NYE dinner. This year we're changing it up and making Macarrones alla Malaguena, a Spanish style mac and cheese with chorizo and peppers. Wish us luck!
